Yum Recipes

I have had some requests for this recipe and thought I'd put it on my blog to share with everyone. This baked oatmeal is yum! and super easy

Black Rock Baked Oatmeal:

1/2 cup butter, melted
1/2 - 3/4 c. sugar
2 eggs, beaten
4 c. oats
1 TBSP baking powder
1 TSP salt
2 c. milk
2 TSP cinnamon
chopped apples or raisins

Mix butter, sugar and egg. Mix dry ingredients in. Then add milk to all. Pour into buttered 9X13 baking dish. You can make the night before and cover and refrigerate. Bake at 350 for 20 min. Then uncovered for 5 min.


Also wanted to share this recipe with you. It is SUPER EASY and SUPER FAST and SUPER YUM! All of our kids love it! Is great with asparagus!

Broiled Parmesan Tilapia:

1/2 c. Parmesan cheese
1/4 c. butter, softened
3 T. mayonnaise
2 T. fresh lemon juice
1/4 tsp. dried basil
1/4 tsp. black pepper
1/8 tsp. onion powder
1/4 tsp. garlic powder
1/8 tsp. celery salt
2 lb. tilapia fillets

Preheat broiler. Grease broiling pan or line with aluminum foil. Mix together the Parmesan cheese, butter, mayo, and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside. arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Turn fillets over and broil for 2 more minutes. Remove fillets from oven and cover with Parmesan cheese mixture. Broil for 2 more minutes, or until the topping is browned and the fish flaskes easily with a fork. Be careful not to overcook the fish.
